• 1/2 cup uncooked barley
  • 1 stalk celery, chopped
  • 1/2 cup chopped carrots
  • 2 tbsp. sliced almonds
  • 6 cups broth (or 6 cups water, 4 bouillon cubes)
  • 1 tbsp. italian seasoning


    1) Place barley in pot with enough water to cover. Bring to a boil, reduce heat, and simmer about 2 hours.

    2) Lightly drain barley, leaving some water in pot. If barley has stuck to bottom of pot, rinse clean or switch to a new pot.

    3) Add all ingredients. Bring to a boil and reduce heat to medium, simmer 15 minutes. Serves 3-4.
