• 8 oz. penne pasta
  • 1 1/2 cup broccoli, chopped
  • 8 slices turkey bacon
  • 1 tbsp olive oil
  • 1/2 medium onion, chopped
  • 1/2 tbsp red pepper flakes
  • 1 cup chicken broth
  • 1 tomato, diced
  • 1/3 cup parmesan cheese


    1) Place penne pasta and broccoli in a large pot of water. Bring to a boil and cook according to pasta directions.

    2) Meanwhile, cook 4 slices of turkey bacon in a large pan over medium heat, until crisp. Set aside on a paper towel. Cook other 4 pieces and remove. 3) Add olive oil and chopped onion to the warmed pan. Saute until softened, about 5 minutes. Meanwhile, cut the turkey bacon into small pieces. Add pepper flakes to onions in pan and saute for 1 minute more. Add the chicken broth and bacon and heat through.

    4) Drain the pasta and broccoli and transfer to a large mixing bowl. Add the onion mixture and the diced tomatoes to the bowl and mix well. Stir in the parmesan cheese and serve. Serves 3-4.
