Crispy Rice ~
  • 1 box Uncle Ben's wild rice
    (without seasoning packet)
  • 1 cup red wine
  • 1 stick butter
  • 1 can beef consomme
  • 1 small onion, minced
  • Chicken with Cashews ~
  • 4 chicken breasts, boneless/skinless
  • 2 tbsp. oil
  • 2 tbsp. butter
  • 4 tbsp. white wine
  • 1 can cream of chicken soup
    (reduced fat & sodium)
  • 1 cup sour cream (reduced fat)
  • 1 tbsp. chopped onion
  • 1/2 tsp. paprika
  • 1/2 cup cashews
  • Salt & pepper to taste


  • 1) Preheat oven to 350 F. Combine rice, red wine, butter, consomme, and onion in casserole dish. Bake 1 1/2 hour.

    2) Meanwhile, brown chicken in oil and butter. Add white wine, soup, sour cream, onion, paprika, salt and pepper. Cover and cook over low heat for 45 minutes, stirring occasionally.

    3) Add cashews to chicken and cook 15 more minutes. Serve over rice. Serves 5-6.
