Chicken Pasta

  • 6 oz. Angel hair pasta
  • 1 lb. boneless, skinless chicken
  • 10 oz. frozen spinach
  • 1 large onion, chopped
  • 1 tbsp olive oil
  • 2 tbsp. Greek (or Italtian) seasoning
  • 1 can diced tomatos, drained
  • Feta cheese, for topping

    Directions
    1) Bring a large pot and a small pot of water to a boil. When boiling, add the pasta and chicken to the large pot. Add the frozen spinach to the small pot.

    2) Meanwhile, warm olive oil in a large pan. Add the chopped onion and saute for 5 minutes. Add the Greek seasoning and diced tomatoes and warm through.

    3) When the chicken is cooked through, remove from water, let cool, and cut into 1 inch pieces. Separate spinach with a fork, and drain. Add chicken and spinach to the pan and stir well.

    4) Serve over angel hair pasta and top with feta cheese. Serves 3.
