
This dish is a great way to use up leftover veggies or meat. Have fun experimenting with different combinations!

1 onion, chopped
2 stalks celery, chopped
1 cup carrot, chopped
2 cups broccoli, chopped
1 tbsp. oil
4 servings of instant potatoes
1 lb. ground turkey
1 can golden mushroom soup
1 can cream of mushroom soup

1/4 cup shredded cheddar cheese
1/2 tsp. salt
1/2 tsp. pepper

1) Chop onion, celery, carrot, and broccoli. Heat oil in a large pan over medium heat and add the vegetables. Cook for 10 minutes, stirring occasionally (adding extra water, if needed).
2) Meanwhile, prepare the potatoes according to box. Preheat oven to 400 degrees.
3) Remove vegetables from pan and add ground beef. Brown, about 5 mintues. (You can cook this separately, while the vegetables are cooking, if you can handle the multi-tasking and do not mind an extra dirty pan!). Drain grease, if needed.
4) In a large baking dish combine vegetables, beef, and two cans of soup. Mix well and top with mashed potatoes. Sprinkle top with cheese, salt, and pepper. Bake for 30 minutes. Serves 4-5.
