
Even picky eaters won't mind the spinach in this recipe! And it's
so low in calories, you can substitute the ground turkey with beef if needed
without any guilt.

1 lb. lean ground turkey
10 oz. frozen spinach
2 tbsp butter or margarine
1 can Cream of Onion Soup
(reduced fat & sodium)
6 oz. box of cornbread stuffing
1/2 cup water
1/4 cup parmesan cheese

1) Preheat oven to 400 degrees.
2) In a skillet, brown and break apart ground turkey over medium-high heat.
3) In a large microwave safe bowl, microwave the spinach on high for 3 minutes and
break apart with a fork. Add the butter and half of the soup and microwave for
another 2 minutes. Stir well.
4) Stir the stuffing into the spinach mixture and then spread into a 9x9 baking dish.
Cover with the ground turkey.
5) Mix 1/2 cup water into remaining soup and pour over the top of the turkey.
Sprinkle parmesan cheese on top and bake for 15 minutes. Serves 3-4.
