Cheesy Chicken Taco Soup

  • 1 Tbsp. olive oil
  • 1 medium onion
  • 1 container spicy salsa
  • 1 lb. cooked chicken,
    shredded or chopped
    (or 15 oz. can chicken)
  • 6 cups water
  • 4 tsp./cubes chicken bouillon
  • 1 packets taco seasoning
  • 1 Tbsp. garlic powder
  • Shredded cheddar cheese
  • Frito's corn chips

    Directions
    1) In a medium-size saucepot, heat olive oil over medium heat. Saute onion until softened, about 5-6 minutes.

    2) Raise temperature to high. Add salsa, chicken, water, bouillon, taco seasoning, and garlic powder. Bring to a boil & reduce to low heat to simmer for 6 minutes.

    3) Serve with shredded cheese and Frito's for topping. Makes 4-6 servings.
