Chicken Merriam

Named after our friend, Justin Merriam, who taught us this recipe.
This dish goes together quickly but is sure to impress!


  • 6 skinless, boneless
    chicken breasts
  • 6 slices Swiss cheese
  • 1 can cream of chicken, Healthy Request
  • 1 can cream of onion
  • 1/2 cup of white wine
  • 8 oz. Pepperidge Farms stuffing (small bag)
  • 1/2 stick butter

    1) Preheat oven to 350 F.

    2) Spray casserole dish with cooking spray and lay chicken breasts in one layer on the bottom. Cover each chicken breast with one piece of cheese.

    3) In a microwave-safe bowl, mix cream of chicken, cream of onion, and white wine. Pour over chicken. Cover sauce with stuffing.

    4) Use the bowl to melt the butter in the microwave. Drizzle over the stuffing & bake, uncovered, 45 minutes (or until chicken is cooked through and stuffing is nicely browned).
