2) Beat softened butter until smooth & creamy. Blend in both sugars, egg, vanilla extract, and baking soda.
3) Blend in sifted flour, cocoa, and cinnamon. (If you do not have a sifter, briskly stir flour with a fork first to aerate.) Refrigerate dough for 30 minutes.
4) Mix extra sugar and cinnamon in a small bowl. Scoop tablespoons of the dough, roll into a ball, and roll in sugar mixture.
5) Place on cookie sheet, several inches apart (do not flatten). Cook for 10 minutes, until cookies are puffed up and cracked on top. Makes about 25-30 cookies.
