Perfect Paella
Adapted from a vintage recipe card!
Ingredients

  • 4 chicken thighs,
    with bone
  • Salt
  • Black pepper
  • Garlic powder
  • Dried oregano
  • 2 Tbsp. vegetable oil
  • 1/2 lb. Kielbasa,
    1/2" slices
  • 1 onion, chopped
  • 1 green bell pepper, sliced
  • 2 cups water
  • 2 tsp./cubes beef bouillon
  • 8 oz. tomato sauce
  • 1 cup uncooked yellow rice
  • 3/4 cup water
  • 1/2 lb. shrimp
  • 1 cup frozen green peas

    Directions
    1) Remove skin from chicken and rub chicken with salt, pepper, garlic powder, and oregano. Brown chicken in oil in a large pot.

    2) Add kielbasa, onion, and green pepper. Cook over low heat for 10 minutes.

    3) Stir in water, bouillon, and tomato sauce. Cover and simmer for 20 minutes.

    4) Stir in rice and water, cover and simmer 30 minutes. Add shrimp and peas, heat through and serve.
