
Adapted from a Campbell's Kitchen recipe.

1 cup uncooked rice
1 Tbsp. vegetable oil
2 lb. chicken, cut into small pieces
1 tsp. garlic powder
1 medium onion, chopped
20 oz. can pineapple chunks, drained
1 can Golden Mushroom Soup
1 cup fresh mushrooms, sliced
3 Tbsp. soy sauce
1 Tbsp. honey
4 sliced green onions

1) Cook rice as directed on package.
2) Meanwhile, heat oil in a large pan over medium heat. Add chicken, sprinkle with garlic powder, and cook until the outside is browned. Drain any liquid.
3) Add onion, pineapple, soup, mushrooms, soy sauce, and honey. Bring to a boil.
4) Simmer over low heat for 10 minutes, or until chicken is cooked through. Serve over rice and top with green onions. Serves 4-5.
