
The spiciness of this soup is based on how hot your sausage is, so feel free to switch to mild or medium.
It varies a lot from brand to brand too! This soup was lightly adapted from this recipe.

1 lb. spicy breakfast sausage
1 onion, diced
2 Tbsp. real bacon bits (or 2 slices cooked bacon, crumbled)
1/2 Tbsp. minced garlic (3 cloves)
4 cups warm water
4 cups potatoes (about 2 large)
1 Tbsp. chicken bouillon (3 cubes)
3 cups kale, torn into small pieces
1/2 cup heavy whipping cream
1/2 tsp. salt
1/2 tsp. black pepper

1) In a large soup pot (6 qt.) over medium heat, brown and break apart sausage until cooked through. Remove from pot and set aside, draining any grease.
2) Add the onions, bacon, and garlic to the pot and cook for 5 minutes. Meanwhile, quarter the potatoes lengthwise and cut into 1/2" slices like the picture below.
3) Add the potatoes, water, and bouillon to the pot. Bring to a boil then reduce the heat to medium-low and simmer for 15 minutes.
4) Add the sausage and remaining ingredients to the pot and simmer for 5 more minutes. Serves 4-5.
